Place Tortellini into boiling salted water.  When the water returns to the boil slightly reduce the heat and continue on a gentle boil for approximately 5-8 minutes. Stir occasionally.  Once cooked, drain the pasta and serve with your favourite MiMas homemade sauce or have a go at these great recipes:

Cooking Time 5-8 minutes

375g veal tortellini

1 lemon

1/2 cup white wine

440g chicken consommé (stock)

3 cups water

1/3 cup chopped fresh parsley or basil

Black pepper, to taste

2 tbsp freshly grated parmesan cheese

Brodo with Tortellini

Serves 4

Place lemon strips, white wine, consomme and water in a large saucepan. Cook for 10 minutes over a low heat.  Remove lemon rind from the pan and bring the mixture to the boil.  Add the parsley or basil, pepper and uncooked tortellini.  Cook for 7 minutes until pasta is just tender. Garnish with extra parsley or basil and sprinkle with parmesan cheese.
